
what you will need:
Red velvet cake mix, 3 eggs, vegetable oil, red rose icing decorations, icing sugar, softened butter

Pre-heat the oven to 190 ..Mix the red velvet cake mix into a bowl with 3 eggs, water and vegetable oil. Blend / whisk together until it forms a nice smooth bowl of red velvety cake batter. Evenly pour the cake mixture into cupcake trays (and resist licking the spoon) This mix made 12 fairly large cupcakes. Leave to bake in the oven for around about 20 minutes..

I was a little disappointed with the 'red' colour of the cakes as they weren't as red as it looked on the packet but then again this is the lazy girls guide! The cakes did turn out lovely and moist though. Right whilst the cakes are cooling its time to make the frosting. Grab the icing sugar, butter and a few drops of water and blend the icing to the consistency you want. In hindsight I would have made the icing a little thicker..
After you've finished icing top with edible little red roses made from icing (Asda's finest haha) and you're good to go! I kept the decorating quite simple and resisted the urge to cover them in heart shaped sprinkles and pink edible glitter but I think the single little rose is quite cute! What do you think? They were easy and simple to put a batch of this in a pretty box and I think they would make a nice edible twist on giving roses this valentines day!

ReplyDeleteIt's hard for me to achieve that perfect red with red velvet cake. My trials usually end up too dark (more of a burgundy shade than a bright red). It's probably too much cocoa powder. However, they still look lovely and I'm sure they taste just the same! (:
